Our food takes its inspiration from both East and  West,  offering an award-winning array of classic Italian dishes and flavours paired with sophisticated contemporary Japanese cuisine.

The kitchen is overseen by Group Head Chef Bubker Belkhit, affectionally knowns as Buba.  Born in Morocco, he started his restaurant food journey in Moscow, working his way up from kitchen porter to the Group Head Chef of Mayfair's Sumosan. His dream, now an achievement, was to create innovative, critically acclaimed contemporary Japanese cuisine that legenday Sumosan is now known and recognized for.

Working with the culinary team of iconic Italian Twiga restaurant Buba creates  an exquisite and harmonious  combination of the finest Italian classics alongside Sumosan’s innovative cuisine, delivering an authentic gastronomic experience.

Sumosan Twiga’s signature specialties include the delectable wild mushroom risotto with black truffle, paccheri with lobster, grilled Angus tenderloin and the Alaskan marinated miso black cod.
